The carefully selected and hand-picked grapes that undergo the appassimento method to produce this Recioto della Valpolicella come from a small, one hectare, east-facing vineyard situated on moraine clay and limestone soils in Pedemonte where vines are around 25 years old. The grapes are dried in small wooden crates known as “Arele” in humidity and temperature controlled warehouses, which offers a luscious and concentrated flavour. After 4 months the grapes are soft pressed and naturally fermented prior to ageing in Slavonian oak barrels for 2 years and a further 6 months in bottle prior to release.
