Made by fermenting the cooked Pina of Agave, most notably that of Blue Agave. Agave takes about 7 years to mature, this is then processed by hand until they are cooked in a clay brick oven. The cooked pina are then crushed by a traditional stone called a Tahona. The resulting juice is collected, and fermented. This is then distilled into the wonderful liquid called Tequila.
Hints of green wood, zesty grapefruit and apple peel, with lots of distinct agave. Manuka honey and roasted agave notes, balanced by a hint of lemon, grapefruit, a little rosemary and continuing spice. Warming and spiced, with more of those citrus and agave flavours persisting.
Nose Light and floral, with agave and notes of cracked black pepper. Palate Agave up front, with citrus zest, lime, vanilla and peppery warmth on the mid-palate. Finish Classically spicy. Overall Well rounded and enjoyable.
