Long maceration, ageing in chestnut and Allier oak for 48 months. Some bunches are withered in the grape-drying loft for 3 months and skilfully added to the blend. Final bottle ageing for 2 months. Due to the typicality of the soil and the specific winemaking techniques deployed, here at Santome we consider our Raboso ready to drink only after a long ageing period of 5 years (4 years in the barrel and in the bottle). Only produced in the best years.
