From Spain in the ‘Sherry triangle’, the area in Cadiz between Jerez del la Frontera, Sanlúcar de Barrameda, and El Puerto de Santa María. Sherry uses a complex system called Solera to create a multitude of distinct styles for any occasion. Most sherries are initially dry with sweetness added at a later time to suit the style.
This is a beautifully fragrant and fresh Fino aged traditionally under a layer of flor with an average age of 9 years. On the palate it is intense and focussed with intense notes of bruised apple, sourdough, citrus peel and salted almonds.
In the nose its bouquet is extremely rich with predominantly sweet notes of dried fruits such as raisins, figs and dates, accompanied by the aromas of honey, grape syrup, jam and candied fruit, at the same time reminiscent of toasted coffee, dark chocolate, cocoa and liquorice.
Fine, embracing and silky; passing is dry and full-bodied. Presence of dried fruit and salty undertones. Long finish. Mahogany with coppery reflections.
Powerful and acute on the nose, yet aromatic, intriguing and inviting. Sensuously textured rather than brittle, absolutely bone dry, aristocratic and very poised. Its profile is perfectly seamless right until the finish where fascinating savoury, nutty, ripples conjure some charming, subtle and elusive final flavours.
Opaquely dark mahogany colour. The nose seduces with intense dried fruit aromas of raisins, prunes and dates, coupled with brown spices of nutmeg and clove, this becomes reminiscent of Christmas cake. Unctuous sweetness marries well with the intense and complex flavours freshened by a slice of acidity
The most famous pale cream Sherry in the world produced by careful blending to create a sweet sherry which is lighter and fresher. Best served chilled.
Starts light and dry, with lots of apple flavours. Becomes saltier than the nose suggested, with subtle hints of liquorice and salted almonds. Very light herbal notes as well.
Predominantly nutty bouquet (walnuts), with toasted, vegetable and balsamic notes reminiscent of noble wood, golden tobacco and autumn leaves. There are noticeable spicy, animal tones suggestive of truffles and leather. Full flavoured and structured in the mouth. Powerful, well-rounded and full bodied.
Crisp, fresh and uncompromisingly dry. Sharp yet elegant aromas of the flor yeast and toasted almonds. Completely dry on the palate with reminders of almonds.
